Avocado Toast with Fried Egg, Summer Berries, and Banana
To start, heat a nonstick pan over medium high heat. When hot, add a tablespoon of avocado oil to the pan with a tablespoon of butter. The oil keeps the butter from burning. Crack an egg into the skillet and fry to your preferred doneness. I recommend keeping the yolk runny in this recipe.
Next, toast your whole grain bread while the egg cooks. The thicker the bread, the better.
While the two hot ingredients cook, cut your avocado in half, remove the seed, and scoop out the rich and creamy green. Mash the avocado with a fork until it’s as chunky or smooth as you prefer. Add salt to taste and a squeeze of lemon juice to stop the avocado from oxidizing (turning brown).
Lastly, place the toasted whole grain bread on the serving plate, layer crust to crust with crushed avocado, and top with the fried egg. Dice up fresh berries (strawberries, blueberries, and blackberries) and banana to serve on the side.
