Roasted Potatoes with Fried Egg
This is as simple as it gets for breakfast – roasted potatoes with a sunny-side up egg on top. I cut the potatoes into asymmetrical chunks and start in an ovenproof pan with olive oil and garlic salt. After getting some color on the outside, move the potatoes to a 350F oven for 10-15, or cooked through with your preferred crispness. I aim for crispy on the outside and soft on the inside. You can toss the potatoes every few minutes to help crisp all sides. Top with a runny egg and chives.
Mushroom and Potato Hash
Add vegetables to the first recipe to make a hash. Before putting the potatoes in the oven, add chopped onion, poblano peppers, yellow bell pepper, and your preferred mushroom.
Sweet Potato Hash
Sweet potatoes work extremely well in a breakfast hash. Add red bell peppers and onions to the oven with the sweet potatoes for extra flavor. To change things up, I like to top with scrambled eggs instead of fried or runny and add some fresh avocado.
