A Step-by-Step Guide to the Best Scallion Oil Noodles

This is a great recipe to learn how to make your own infused oil. Scallion oil has great flavor and also pairs well with root vegetables.


Ingredients

  • Scallions (Green Onions): 1 full bunch
  • Stir-Fry Noodles (Udon or Ramen): 1 packet or serving size, per bowl
  • Vegetable Oil: 1 cup (or enough to fill the bottom of your pan)
  • Soy Sauce: 2-4 tablespoons, to taste
  • Oyster Sauce: 1-2 tablespoons
  • Red Pepper Flakes: to taste

Infuse the Oil with Scallion Flavor

The first step in this recipe is to make the scallion oil. Start by adding the neutral oil (e.g., vegetable) to a small nonstick pan or pot. I normally make enough oil for one dish, which is about one cup oil to 3-4 full scallions. If you want to make more, adjust the ratio upwards.

Bring up the oil over medium heat. This recipe should lightly fry the scallions, which infuses the oil with flavor. Don’t overheat the pan or burn the scallions. One recommendation – start with a small serving in case anything burns.

Cook slow and steady for about 10-15 minutes. About halfway through, add a few pinches of red pepper flakes if you like spice.

When the scallions turn golden brown, carefully pass the oil through a fine strainer into a heatproof bowl or container. Keep the scallions, which may continue to darken in color, for an optional topping.

Prepare the Noodles

As needed, boil the noodles per package instructions (some noodles are ready to go straight into a pan to stir-fry).

Fry the Noodles in Scallion Oil

Heat a pan with high ridges over medium high. When the pan is hot, add enough scallion oil to line the bottom of the pan.

Next, add the noodles and stir-fry for 3-5 minutes, adding more scallion oil as it’s absorbed by the noodles.

After the 3-5 minutes, add one tablespoon each of soy sauce and oyster sauce. This will darken the noodles and add great flavor. Fry for another 2-3 minutes. As needed, add more scallion oil, soy sauce, or oyster sauce to keep the fried noodles from drying out.

Plate the Scallion Oil Noodles

First, place the Scallion Oil Noodles into a small bowl. Next, optionally, top the noodles with the crunchy scallions used to infuse the oil. Personally, I love the texture and char flavor added to this dish. Lastly, top with fresh, thinly sliced scallion greens and drizzle with more scallion oil.
