Tomatoes are synonymous with summer. My favorite tomato to eat is the Heirloom Tomato – one that looks different from the rest and tastes better.
Let’s make a quick Heirloom Tomato Salad that’s packed with flavor!

Ingredients
- Heirloom Tomatoes: 3-4 tomatoes (the sizes vary) of different colors
- Shallots: 1-2 shallots
- Preferred Olive Oil: 2 tablespoons
- Lemon and Parsley: 1-2 tablespoons
- Salt and Pepper: to taste
- Red Pepper Flakes (optional): for spice, to taste
Directions

Select the Perfect Heirloom Tomato
This first step happens at the grocery store (or garden). Heirloom Tomatoes come in many shapes, sizes, and colors. Select a variety of firm or soft tomatoes.
Prepare the Heirloom Tomato and Shallots
To prepare the vegetables:
- Cut the Heirloom Tomatoes into wedges. Depending on the size, aim for about 6-8 wedges per tomato. Cut the tomatoes smaller if you want bite size pieces or as wide as you like if you’ll be using a fork and knife.
- Finely dice the shallots, which are milder onions (at least on my palette). The finer the better when eaten raw. If you want to cut the onion-like bite, soak the diced shallots in lemon juice for about 10 minutes.
- Rough or fine chop the parsley. Italian parsley is preferred for this recipe. Fresh, dried, or lightly dried parsley all work well. In this recipe, I used lightly dried parsley.

Plate the Heirloom Tomato Salad
Playing this dish is simple.
- First, place the Heirloom Tomato wedges on your plate or in your bowl.
- Second, spread the finely chopped shallots over the tomatoes.
- Next, squeeze lemon juice over the tomatoes and shallots. Not much is needed. Lemon is another fresh taste that works well with the tomatoes. If you soaked the shallots in lemon juice, you can skip this step.
- Afterwards, drizzle your preferred olive oil over the salad. Extra virgin olive oil is perfect for this recipe. I used a chili infused olive oil to add spice.
- Lastly, lightly top with salt, pepper, parsley, and (optionally) red pepper flakes.
